Maryland Cuisine
Maryland's Test Kitchen
- ABOUT US -

What is Maryland cuisine? To me, it’s a dynamic celebration and exploration of the distinct plants, diverse people, and unique environment that make us who we are—kind of like Maryland’s living test kitchen. We have an incredible, untapped edible landscape right in our backyards, from coastal tidewaters to deep woods, which brings me to my ultimate hot take: Maryland deserves better than Old Bay, not gonna lie. While that iconic yellow tin will always have a place in our history, our food identity shouldn't stop at celery salt. It’s time to move past the predictable and start experimenting with the real, wild flavors of our region, which is why this blog is packed with recipes highlighting local, foraged ingredients. A huge part of that mission is shining a spotlight on spicebush—a native wild plant with a complex, peppery, allspice-and-citrus flavor profile that we sustainably forage, small-batch dry, and sell right here on the site. By treating our local food scene like a creative playground, we're here to help you bring the authentic, untamed taste of the Maryland woods directly into your own kitchen.
